  • ¼ tsp salt
  • 3 large eggs
  • 1/3 cup maple syrup
  • ½ cup unsweetened milk of choice 
  • 1 tsp vanilla extract
  • ¼ cup coconut oil, melted
  • ½ cup blueberries
  • 1 tbsp turbinado sugar 
Instructions

Preheat the oven to 350 degrees Fahrenheit. Grease a muffin tin. Mix the flour, meal, protein powder, baking soda, and salt in a bowl. Mix in the eggs one at a time. Add the syrup, milk, vanilla extract, an oil. Mix well. Add the blueberries and stir until just combined. Portion the batter into the muffin tin. Sprinkle turbinado sugar on top. Bake for 15-18 minutes, or until an inserted toothpick comes out clean. Let the muffins sit for 5 minutes before transferring them to a cooling rack.
