The Best Protein Bagel Recipe
-2/3 cup all-purpose gluten free flour
-1 tsp baking powder
-4 tbsp drink wholesome vegan unflavored protein powder
-2/3 cup plain unsweetened greek yogurt
-pinch of salt
-1 egg (optional)
Preheat the oven to 425°F. In a bowl, mix together the flour, baking powder, protein powder, and salt until well combined. Add in the greek yogurt and stir until a dough forms. You can add more yogurt if the dough is too dry. Divide the dough into 2 equal pieces and shape each piece into a smooth dough ball on a lightly floured work surface. Roll each ball of dough until it becomes a rope, making it as smooth and even as possible. Pinch the ends of the rope together to form a circular, bagel shape.
Fill a large, wide pot with 2 quarts of water. Bring water to a boil, then reduce the heat to medium-high. Drop bagels in, making sure they have enough room to float around. Cook for two minutes. Beat the egg in a small bowl with a fork. Using a pastry brush, brush each bagel with and place it on a baking sheet. Bake the bagels for 20-25 minutes, rotating the pan halfway through. Allow the bagels to cool on the baking sheets for 20 minutes before eating.
