Instructions
Preheat the oven to 350°F. Grease a 9 × 5” loaf pan and set it aside. Whisk the protein powder, oat flour, baking soda, and salt together in a large bowl. Peel the bananas and place them into another large mixing bowl. Mash them well with a fork. Add the eggs, coconut oil, applesauce, and vanilla extract to the bowl and stir everything until it is well-mixed. Combine the contents of the two bowls and mix slightly. Do not over-mix! Fold in the walnuts (or chocolate chips), transfer the mixture to the loaf pan, and bake it for 50 minutes, or until an inserted toothpick comes out clean.
