-½ cup coconut oil

-3 large eggs

-¾ cup chocolate chips
Instructions:
Preheat the oven to 350 degrees Fahrenheit. Grease or line a muffin pan with parchment paper. In a medium mixing bowl, combine the protein powder, baking powder, and sea salt. Then mix in the coconut oil, dairy-free milk, eggs, and vanilla extract. Finally, fold in the chocolate chips. If you would like, set aside a few chips to sprinkle on top of the muffins. Pour the batter into the pan. This recipe makes 12 muffins, so depending on the size of your pan you may have to do this twice. Bake the muffins for about 25 minutes, until the tops are golden and an inserted toothpick comes out clean.
