Banana bread is arguably the best baked good. Protein is arguably the best macronutrient. Is this a match made in heaven? Drop everything and make this protein powder banana bread because it is out of this world! -1 cup Drink Wholesome vanilla protein powder
-¾ cup of oat flour
-1 tsp baking soda
-1/4 tsp salt
-3 ripe bananas
-½ cup coconut oil
-2 large eggs
-¼ cup unsweetened applesauce
-2 tsp vanilla extract
-½ cup walnuts (optional)
Preheat the oven to 350°F. Grease a 9 × 5” loaf pan and set it aside. Whisk the protein powder, oat flour, baking soda, and salt together in a large bowl. Peel the bananas and place them into another large mixing bowl. Mash them well with a fork. Add the eggs, coconut oil, applesauce, and vanilla extract to that bowl and stir everything until it is well-mixed. Combine the contents of the two bowls and mix slightly. Do not overmix! Fold in the walnuts (or chocolate chips?), transfer the mixture to the loaf pan, and bake it for 50 minutes, or until an inserted toothpick comes out clean.
